1 cup pineapple tidbits (juice drained and reserved for cooking)
1 lime, juice and zest
1 Tbs fresh cilantro, chopped
1 Tbs vegetable oil
2 tsp rice wine vinegar

  1. Cook the rice according to the package directions, except substitute half of the water with pineapple juice. Let the rice cool before stirring in the remaining ingredients. Serve as a side dish with fish tacos.
